Weekend Recap: 4th of July Style
This morning came way too fast. Greg and I had both been off Thursday and Friday of last week so our alarms this morning were not welcomed.
We had a great long weekend. We kicked off our weekend by having our 20 week ultrasound for Baby Harrison. We learned that our sweet baby is a BOY! We were thrilled. We decided to celebrate with a quick hibachi lunch before going home to have our small gender reveal dinner with Greg's family.
Our dinner included Smoked BBQ Chicken, Grilled Vegetables, Baked Potatoes, and rolls. We finished off our dinner with a Homemade Neapolitan Ice Cream Cake. I layered a half gallon of strawberry ice cream on the bottom of a spring-form pan. The cookie layer was a package of crushed Oreo's with a bottle of Magic Shell. The top layer was a half gallon of vanilla ice cream. It was tasty! We decided to wrap a baby boy outfit in a box for Greg's Mom and Grandma to open. That was how they found out about baby boy. They were so thrilled. We had made pink lemonade and blue raspberry lemonade as a way of voting. Everyone except for Greg's Dad picked boy. Sorry Winston.
Friday morning was painting day for Baby Carson. Our plan was to just paint one wall as an accent wall in blue and to leave the other three walls gray but we loved the blue color and decided to paint the whole room.
We ended our day having dinner with our friends Cameron and Amy and seeing fireworks. I thought a Peanut Butter Pie would be a fun dessert.
To make the pie all you have to do is mix a 8 oz package of softened cream cheese, a 14 oz can of Eagle Brand milk, 12 oz of peanut butter, 8 oz of cool whip. Then fold in a bag of Heath Toffee Bits. This is supposed to just make one pie but you can easily make two pies out of this. Just pour your filling into a graham cracker crust and refrigerate for a few hours to let it firm up. It is so rich, a small piece is plenty.
Saturday we had a family lunch with Greg's family and his sisters boyfriend's family. I was asked to bring a dessert so I made this yummy fruit pizza. It is so easy and so very tasty and festive. Saturday night we decided to not fight the traffic of the fireworks so we watched the Macy's Fireworks on TV. Hello NYC fireworks.
Sunday was baby furniture day. We set up the crib and our new glider. They look great. We ended our weekend cheering on the USWNT to victory in the World Cup. What a game! Go USA!
I hope all of you had a wonderful 4th of July Weekend.
